Depuis 1991, les registres des d\u00e9penses de nourriture et de dessert des cuisines de Topkap\u0131, Dolmabah\u00e7e et Edirne Palace, les livres des banquets importants, les livres \u00e9crits par des fonctionnaires \u00e9trangers et divers groupes professionnels, les documents des biblioth\u00e8ques Beyaz\u0131t et Millet \u00e0 Istanbul, l\u2019ouvrage intitul\u00e9 \u00ab&nbsp;Un cahier de banquet&nbsp;\u00bb appartenant au mariage de circoncision de \u015eehzade Beyaz\u0131d et \u015eehzade Cihangir, les fils du sultan Soliman le Magnifique, tenu au palais d\u2019Edirne en novembre 1539,  En utilisant de nombreuses sources originales telles que les noms de famille et les anciens dictionnaires ottomans, il ajoute plus de 200 recettes historiques \u00e0 ses archives et porte des go\u00fbts oubli\u00e9s jusqu\u2019\u00e0 nos jours avec ses menus d\u2019\u00e9t\u00e9 et d\u2019hiver.<\/p>\n<p>Afin de garder en vie les sp\u00e9cialit\u00e9s ottomanes oubli\u00e9es, Asitane, qui propose les noms utilis\u00e9s \u00e0 son \u00e9poque, organise p\u00e9riodiquement des semaines gastronomiques sp\u00e9ciales telles que \u00ab&nbsp;Plats de la p\u00e9riode Fatih Sultan Mehmet&nbsp;\u00bb, \u00ab&nbsp;Plats aphrodisiaques des palais ottomans&nbsp;\u00bb, \u00ab&nbsp;Poissons et fruits de mer dans les palais ottomans&nbsp;\u00bb. Situ\u00e9 juste \u00e0 c\u00f4t\u00e9 du mus\u00e9e Kariye \u00e0 Edirnekap\u0131, au rez-de-jardin d\u2019un manoir ottoman restaur\u00e9, le restaurant Asitane accueille ses pr\u00e9cieux h\u00f4tes avec son espace int\u00e9rieur d\u2019une capacit\u00e9 de 120 personnes et un jardin d\u2019\u00e9t\u00e9 d\u2019une capacit\u00e9 de 130 personnes.
