It started in 1867 in Kayhan Bazaar. In fact, although the basic ingredient is Doner, what makes Alexander Alexander is the butter on top, the tomato sauce, the yogurt next to it and the fatty pita pieces underneath. Also, the meat of Iskender is different from the meat of any doner.The meat from which Iskender kebab is made is obtained from rams fed with Uludag thyme. The fat of the meat of Alexander becomes less. The tomato sauce and yogurt used also affect the quality very much. Alexander should not be regarded only as a turner.<\/p>\n<p style=\"text-align: left;\">The leaf is not rotary, contrary to popular belief, alexander is not rotary. Iskander is made with a mixture of rotary minced meat and cut into long pieces. If the leaf is rotary, it is formed by bringing the meat to the thin size of the leaf and lining up the bottle and cannot be cut into large pieces.<\/p>\n<p style=\"text-align: left;\">The family, which started to work with Mehmet Efendi Restaurant in the 1850s, is engaged in lamb translation and tandoori business, which was common in Bursa at that time. In such an Ottoman period, when the cooked meat (tandoor or lamb flipping) was sold in fixed places as well as on the tables above the head, the son Iskender went on a quest and tried to implement thoughts such as &#8220;How can we differentiate the business?&#8221; and &#8220;How can we do better?&#8221; with the support he received from his uncle Sabit Dede. Upon his father&#8217;s words, &#8220;Don&#8217;t invent for us,&#8221; he first tells his mother about the subject and then convinces his father. As a result, he offers his father, &#8220;Do not raise the lamb, which has been cooked parallel to the fire on the ground for centuries, on the steep barbecue!&#8221; Thus, they tried the idea of vertical kebab in Bursa and the business continued to develop with the support of his father Mehmet Efendi.<\/p>\n<p style=\"text-align: left;\">Iskender Effendi, who set out for this purpose, gradually used bony meat; It cleanses it of its bones and nerves, attaches it to a bottle and cooks it by rotating it in front of the fire, then cuts it finely and presents it. This different presentation attracts a lot of attention in Bursa and starts to be known as Iskender Efendi&#8217;s &#8220;rotating kebab&#8221;. Because the meat is boneless, cooked in a vertical stove, cut in a different way. But not in the form of today&#8217;s kebab; simpler, without the use of forks and knives, the yogurt placed on the edge of the meat placed on the pita, which is called alaturka as it was called at that time, was supported by tomato paste and butter and became a taste plate. Now, when Alexander is mentioned in Bursa, he comes with that plate. In these years, the population of Bursa is very small. It consists of districts such as Kayhan-Tahtakale-Reyhan triangle and Maksem and Tophane. People know each other. The place where Iskender Doner Kebap, who became known with Mehmet&#8217;s son \u0130skender Efendi at that time, was presented is a shop of 20-30 square meters.
